Upstairs at the hotel, customers can order room service from a Nobu-curated menu that includes his rendition of a burger. It marked the first time Nobu offered teppanyaki tables. In 2013, the Nobu team debuted its first hotel, complete with the largest Nobu in the world at the base.

During the interim, Matsuhisa wanted to keep his staff employed and opened a temporary location at Bally’s Las Vegas, but that closed in March 2020 when the state shut down nonessential businesses to slow the spread of COVID-19. In 2020, the hotel closed to renovate into Virgin Hotels, but the restaurant returned with a remodel and its collection of Japanese whiskeys when the resort debuted last March. Nobu opened its first Las Vegas location at the Hard Rock Hotel in 1995 when the resort debuted on the east side of the Strip.

Matsuhisa’s indelible mark on the culinary world includes his signature dishes such as miso-marinated black cod, rock shrimp tempura, yellowtail sashimi with jalapeño, and king crab tempura, many of which can be found on any high-end Japanese menu now. Yellowtail sashimi with jalapeño at Nobu.
